What difference does “grass-fed” make in our cheese?
Cheese made with milk from 100% grass-fed cows has much higher levels of good omega-3 fatty acids and lower levels of omega-6 fatty acids. In fact, the ratio of omega 6 to omega 3 in 100% grass-fed dairy products is 1 to 1. In regular whole milk, the ratio is 5.7 to 1. Here’s why that ratio matters:
You need some omega-6 fatty acids in your diet but consuming too much omega-6 and too little omega-3 increases your risk of cardiovascular disease, obesity, and diabetes.
Using 100% grass-fed organic dairy lowers your intake of omega-6 but increases your intake of omega-3 and conjugated linoleic acid (CLA), a heart-healthy fatty acid.
What difference does “raw” make in our cheese?
During our cheese-making process, we never heat the milk past 90 degrees. This low temperature preserves all the natural and beneficial enzymes and probiotics.
Many so-called “raw” cheeses are actually flash pasteurized, a process that doesn’t quite fulfill the legal definition of pasteurization. So while these cheeses may not be fully pasteurized, they are not entirely raw either.
